Marinate instructions: Whisk all of marinade ingredients together in whatever container you are going to marinate your meat. Remove 1/4cup to use later for basting.
Add beef to marinade and turn to coat. Marinate 4-6 hours in the refrigerator.
Add potatoes to large microwave safe bowl. Add 2 T of water and microwave uncovered for 4-5 minutes or until fork tender. Drain
Add peppers, onions and 2 T of reserved marinade, 2T of olive oil, 1/2 tsp salt and 1/4tsp pepper. Toss evenly to coat, refrigerate.
Assembly the skewers by alternating meat with the marinated vegetables.
Grilling instructions: Grease and preheat grill to medium high heat. Grill skewers until lightly charred all over, approx 2-3 minutes each side. Bast with remaining marinade halfway through cooking.
Let rest 5 minutes after serving.
