Red Onion, sliced

Lime

Olive oil

Chili Powder

Paprika

Chicken Fajitas
  1. Preheat oven to 400 degrees F
  2. Line a large, rimmed sheet pan with foil or parchment paper
  3. Slice the peppers. Spread all on one even layer. Use two pans if necessary. Sprinkle with oil and seasonings
  4. Cook 15 to 18 minutes or until chicken has no pink inside.
  5. Zest the lime and juice it. Sprinkle lime zest and lime juice over all.
  6. Serve with warmed tortillas, avocado (or gauc), sour cream, chopped cilantro, and/or lime wedge, if desired.
