- Bell pepper, yellow

- Bell Pepper, orange

- Red Onion, sliced
- 1 each
- Lime
- 3 TBSP
- Olive oil
- 2 tsp
- Chili Powder
- 1 tsp
- Cumin
- 1 tsp
- garlic powder
- 1 tsp
- Paprika
- 1/2 tsp
- salt

- Preheat oven to 400 degrees F
- Line a large, rimmed sheet pan with foil or parchment paper
- Slice the peppers. Spread all on one even layer. Use two pans if necessary. Sprinkle with oil and seasonings
- Cook 15 to 18 minutes or until chicken has no pink inside.
- Zest the lime and juice it. Sprinkle lime zest and lime juice over all.
- Serve with warmed tortillas, avocado (or gauc), sour cream, chopped cilantro, and/or lime wedge, if desired.
